Serves 4

A fresh easy to make tomato salad, the moroccan way!

Ingredients:

3 tomatoes
1⁄2 a red onion
A handful of chopped fresh parsley and coriander Good quality olive oil
Salt and pepper, to taste

Method:

Peel the red onion and remove the seeds and skin from the tomatoes, then finely dice both.

Throw into a bowl with the parsley and coriander, a good drizzle of olive oil, and salt and pepper to taste.

Notes:

  • Be sure to use good quality olive oil here.
  • This salad is open to interpretation. Try adding diced avocado, cucumber, bell pepper, a bit
  • of white vinegar, or a squeeze of lemon juice.
  • This is sometimes referred to as the Moroccan National Salad, perhaps because red and green are the colours of the Moroccan flag.
